Something for Diabetics (not vegan)

This past few months I've been making amazing bite sized cupcakes, but mom is on a diet right now too. So I broke out a classic +KraftRecipes recipe. Use sugar free versions of Jello and Cool Whip, and skip the crust to cut more carbs. I like to decorate with small pieces of fresh fruit or frozen berries.

I started blogging about food in the middle of a diet.

So here is one of my favorite detoxifying recipes:

Garbanzo Bean Salad

4 cans of garbanzo beans, drained and rinsed
1-2 cups of diced tomatoes
1-2 cups of diced cucumber
1 bunch of parsley, chopped
1 large can of sliced olives
Balsamic vinegar 
Olive oil
Black pepper

Combine all and chill.  Check the nutritional content of your cans of garbanzo beans for an appropriate portion.
